The Recipe: Sheet Pan Chicken Tinga Vegetable Bowls
Note: we had to split this up on to two trays as it would have taken too long to cook on one (due to adding extra vegetables to the recipe we were inspired by).
Chicken Sheet Pan
Chicken Breast, chopped (1 Costco package…about 8 chicken breasts)
Mushrooms (most of a Costco package…this is maybe 20 large cremini mushrooms)
1 8oz can Chipotle peppers in adobo, chopped
2 & 1/4 cups red enchilada sauce (1.5 cans from any local Mexican grocery store)
3 tsp dried oregano
3 tsp ground cumin
3 tsp smoked paprika
3 tsp salt
Vegetable Sheet Pan
Broccoli (1 Costco bag, or a full head or more)
Cauliflower (1 Costco bag, or a full head or more)
5 Bell Peppers - Various colours
2 Onions
5 Poblano Peppers (optional, add spice and depth)
Any other vegetables you like (brussels sprouts, zucchini, etc.)
Avocado Salsa
1 Avocado
1 Jalapeno
Cilantro to taste
Salt to taste
Juice of 1/2 Lime
Other
2 cups coconut rice (see notes)
Fresh basil (for garnish)
Cilantro (for garnish)
Greek yogurt
Limes
Cheddar cheese
Instructions
Preheat the oven to 425° F.
On a baking sheet, toss the chopped chicken with 2 tablespoons olive oil, enchilada sauce, chipotle peppers, oregano, cumin, paprika, salt, and mushrooms.
On another baking sheet, add the bell peppers, onion, and other vegetables. Drizzle with 1 tablespoon olive oil. Season with salt and pepper or vegetable seasoning. Arrange evenly on the pan. Bake both trays for 20 to 25 minutes, until the chicken is cooked and the peppers/vegetables begin to char.
Shred the chicken and toss it with the sauce on the pan.
Make the avocado salsa by combining all ingredients in a bowl. Season with salt to taste.
Serve the chicken and vegetables over bowls of coconut or regular rice. Top with cheese, avocado salsa, lime yogurt, and fresh herbs. Add a squeeze of lime over each bowl.
Notes
Coconut rice: 2 cups rice, 1 can coconut milk, 1.5 cups water with salt and stevia.
Greek yogurt crema: A few big spoons of Greek yogurt, juice of half a lime, and a dash of lemon extract.
Toppings: Cilantro, basil, avocado salsa, Greek yogurt crema, cheddar cheese.
Bowl build: Chicken tinga, vegetables, coconut rice, yogurt crema, cheese, basil, cilantro.
